Simple, healthy and inexpensive college meal (aka) The many ways of eating green beans

To make Monday a little bit more exciting, let’s put aside some school works and talk something fun, shall we? By something fun, I mean food, and I hope you also agree. Do you love green beans? Do you eat healthy? Do you enjoy and appreciate easy and simple recipe? If yes, I think you are reading the right post.

This is what we´re making
This is what we´re making – A pack of salmons that contains 4 slices costs 38.90 –42.90Kr at Kiwi (depends on the packing,  you have to  get the ones with skin). Skinless ones cost a little more and I see no point buying those since removing fish skins is not difficult at all.

A pack of frozen green beans costs 11.50Kr at Kiwi and it has two portions, very okay for a student budget. Before you stir-fry, make sure you soak the beans in very cold water to defrost. You’ll get a funny taste if you use hot water, or may be you’ll like it, I don’t know. Your choice!

Drain the water and then just stir-fry the beans. Don’t know how to stir-fry? It’s okay, I still got your back ;). So basically, you heat your frying pan on high heat, put a little bit of oil, add a little bit of garlic (if you’d like) when the oil is hot, add the beans, add salt and pepper (again, optional). Stir often, and that’s called stir-frying. You do that for about 7 minutes if you want your beans to be completely cooked.

You can eat your fried-beans with anything. The easiest and also one of my favourite ways is to eat with Norwegian salmon. I just microwave the fish, and that’s it. To tell you the truth, I’m the queen of microwave (meaning, I microwave everything), more on this later.You can also eat with rice and fried egg like this.

Another way is to fry with other veggies, very suitable when you are cooking for many people.

Stir-Fried Pork and Vegetables

All you need for this baby is as shown in picture 1 as you might have already guessed.

How we do

Cook the pork in boiling water for about half an hour, we don’t want to fry them for so long. While you are waiting, wash, peel and chop your vegetables.

When the pork is cooked, cut them into small pieces. Now you are ready to fry.

Heat a frying pan and add a teaspoon of oil when the pan is hot. Or, you can even let the pork fat do the frying. Then, add your pork and stir-fry. After about 2 minutes, add the carrot, as they need a little more time to get tender.

Cover the pan with a clear lid. This is pork we are frying, so there will be a lot of cracklings and hot oil sputtering as it cooks. Use the lid as a shield like an ancient soldier whenever you are stirring ;). Or if you are just too afraid to open the lid to stir, you can also shake the pan.

When the carrot and pork are cooked, add the chopped onion, cabbage, celery, salt and pork powder, and stir-fry them for about a minute. This one is amazing with rice.
