Hola Hola! Oh wait! That´s not English. Anyways, I was just talking about beef tripe salad up there. Beef tripe, according to wikipedia, refers to the first three chambers of a beef stomach. Before you ew, why don´t you try this recipe first, huh?

First, you cook the beef tripe for about 45 mins. Meanwhile you will chop cucumber, cherry tomatoes, shallot and coriander. Take out your tripe, cut them pretty and mix with everything. Cut a lemon and squeeze over the mixture. Add salt and chili, and enjoy your hot, salty and sour tripe salad.

If tripe is too intense for you, you can use normal meat.
