Chin Traditional Style Chicken Soup – Arsa Lai Chuan

(Written only in English because almost every Chin knows how to cook this one)

Ok, let’s just get right into it! First, we will cook our chicken with cold water, salt, chicken power and a handful of rice. You can also use vermicelli instead of rice. If you are using vermicelli, you don’t need to add them at this point. It takes only 3 minutes to cook vermicelli.


Meanwhile, we’re going to prepare our carrots, celery and coriander, and also ginger and a clove of garlic. We peel everything that needs to be peeled, wash and cut. Then, we crush garlic and ginger in the mortar with pestle.


Now, we are watching an episode of “ Modern Family´´. Trust me, this is part of the cooking process and I’m being very serious. The only alternative is to read your local newspaper. Otherwise, you chicken won´t be properly cooked.

After watching and reading and waiting and joking for about an hour, we will now add the carrots. When the carrots are cooked, we’ll add celery and coriander and that’s it.


So, what do we do with the rest of the chicken? We’ve cooked a whole chicken after all. Traditionally, we fry some garlic and mix with the chicken, with a sprinkle of salt on top of everything.

This is the simplified version of the traditional style. A true blue Chin traditional style involves grilling the chicken on fire before cooking. Well, not really grilling, but only for a while to clean up all the leftover chicken-feathers, and to bring out a little bit of chicken oil, I guess. I don’t really remember the taste, but a lot of my homies say it tastes definitely better the traditional way.
